Roasted Butternut Squash Rissoto Recipe


Blog Author Karen Hanrahan here, with another recipe to share, inspired by a friendly chat with Chef Kelly Fisher.

I adore risotto.  Don't you? At this time of the year I take advantage of the multitude of squashes available and add them to my favorite risotto recipe.

Cut a Butternut Squash in 1/2 lengthwise. Brush with olive oil, liberal amounts of crushed garlic, fresh grated nutmeg, salt and pepper. Roast until tender and crusty. About 90 minutes.

Remove roasted squash flesh from the skin and puree in the blender. You should not need to add any liquid to get it smooth, if you do -- add chicken stock. Turn into your risotto at the later simmering stage of your favorite recipe. Don't forget the freshly grated parmesan.

There are a lot of purveyors that I deal with in my work. Some are standard, that seemingly everyone else uses and some are mom and pop or individuals, like Pete Medinis – my spice guy. I met Pete years ago and found him a little over eager – he gave me way too much information. Giving him a hard time about it probably had him wondering if he would ever get my business yet he was really persistent and I admire that.

Pete sells spices – it’s all he does, he’s formerly a chef and has an innate and sensitive appreciation for what spices enhance a recipe. He sells quality which is what Classic Cuisines Catering is all about, and he sells distinction. His specialty rubs and combinations are sold exclusively by him and the man who blends them. When Chef Kelly
ponders autumn he thinks crisp.  The air, the apple, the vegetables roasted just so. Seasonal foods express comfort, home, and entertaining!!

The harvest season is about to begin. How can we help?



I think the apple is the epitome of Americana. When you think of an apple you can feel it sitting ever so comfortably in the palm of your hand. You can totally imagine that first crisp bite. Living in the midwest, an autumn does not go by without some reverence to the almighty apple. The local orchards are full, ripe and beckoning to my sense of simple fruit celebration and culinary expression. Apples say crunch. They say pick me up and take a bite from me. They want nothing more to be juiced, pressed and cidered. They  want to be baked, crumbled, sauced. They need to be complimented with sugar, cinnamon and clove. For all of us here at Classic Cuisines Catering, it’s about the Apple Crumble.  Tart thinly sliced apples, topped with a delectable crumbly spiced topping, baked crisp and served with a dollop of crème fraiche.

I adore the novelty and tradition that a pumpkin can bring to an occasion. Something about its brilliant orange, it’s hardiness – it’s functional and multi-use properties. Pumpkins bring out the child in me, not a fall goes by without carving a jack-o-lantern. Classic Cuisines Catering often utilizes seasonal fruits and vegetables in their menu’s. Our most popular pumpkin recipe’s include spiced pumpkin nut bread, muffins, and an absolutely amazing pumpkin soup




Cinnamon is all about aroma, comfort and home. Many a homemaker will simply simmer a cinnamon stick to fill a room with it’s earthy warmth and goodness. As a chef I like to use it in a variety ways; it’s absolutely awesome in my chili, in many of my fruit desserts and makes a delicious addition to a hot cocoa.  If you haven’t added a bit to a chocolate chip cookie recipe you have no idea what you are missing.

Who is Chef Kelly Fisher

Chef Kelly from time to time, might wonder why he's still in the catering business. The truth is one truly has to have a remarkable sense of humor, patience and candor in order to manage the ebb and flow of the typical day of a high quality fast paced and successful catering company. 

If Kelly didn't simply love to cook he would not be where he's at today. If he didn't care tremendously about delivering a good product; food that looks good enough to eat and food that tastes remarkable, he'd have lost his reputation a long time ago. Making a meal memorable, paying attention to every last detail and having any event feel like he's entertaining in his own home are all distinctions that sets Chef Kelly apart from most caterers.

Mini Bloody Mary's and Green Bean Bundles



Blog Author Karen Hanrahan here. In speaking with Chef Kelly Fisher of Classic Cuisines Catering today, I was reminded of these two wonderful recipes that make quite an impression at a social gathering. He asked me to share.

Mini Bloody Mary's

Freeze a bottle of great vodka - no it won't actually freeze - duh, but it will get ridiculously cold.  That's what you want.

Peel - yes peel, lots of cherry or grape tomatoes.  Toss in boiling hot water first - the skins will peel off really easily. Take a toothpick and pierce a peeled tomato. Dip in freezing cold vodka and dip again in Kosher Salt. Eat immediately. It's a burst of tomato, vodka and salt in your mouth - a Mini Bloody Mary!! These are so much fun!





Green Bean Bundles


Steam Fresh Green Beans for 10 minutes, cool in an ice water bath to stop further cooking. Take about 3 green beans and wrap with thinly sliced prosciutto and provolone cheese - lay on a plate until the plate is full, sprinkle with your favorite balsamic vinaigrette and fresh ground black pepper.
